During one of our snow days, we made some banana bread.

Fresh from the oven. Spread with butter... yummy goodness!
Here's the recipe we used (it's my mom's):
1 cup brown sugar (packed)
2 tbsp oil
1 egg
1 tsp vanilla
2 cups flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup orange juice
2 large bananas, mashed
Combine all ingredients in mixer. Pour into a greased bread tin. Bake at 325 for 1 hour. (I always bake mine longer because it is never done after one hour.)

Looks scrumptious! The OJ makes the bread so wonderfully moist, doesn't it?
