Rainbow Cake & Cupcakes
We started our Treat Tuesday on Monday because there was a lot to do! We were bringing dinner to Joel's brother (Nate) and wife on Tuesday night- and Nate just celebrated a birthday, so we wanted something fun for it.
After spotting this idea on other blogs before {HERE and HERE}, we finally had a good reason to make a RAINBOW cake.
You'll need this:
2 boxes of cake mix (make according to package, but cut down on bake time)
wilton decorating gel (bought at Walmart)
Instead of having 6 layers, we just made four and used the leftover cake batter to make rainbow cupcakes.

Uncle Nate was surprised to see the colorful layers when we cut him a slice. :-)

For the frosting, I made a Cream Cheese Buttercream using a recipe I found online, but tweaking it just a bit. Your kids will think this is the coolest cake ever... so give it a try! :-)
I'm sure we'll try this again for a birthday or other special celebration and maybe even make 6 layers instead of 4!
