The Night before the 1st Day of School...

So, our summer here is officially done (even though the calendar says last day of summer is September 22).  School starts tomorrow, and I really can't believe it.  It seems like we just finished the last school year and had almost 3 months of vacation ahead of us.  Wow... that flew by!!  I have mixed feelings about starting back up tomorrow... it is time to get back into a routine and I think the kids need to be back in school, but I will still miss our lazy days and spending all that extra time with them.  I'm excited to hear all about the fun they'll have tomorrow with new teachers and new friends tho!

To kick off the school year we had a special night.  We made homemade pizza (which is usually our Sunday night routine), watched a movie, and then had a special dessert.  I wanted to surprise the kids with the dessert, so they didn't see it at all until right before we ate it. 

PENCIL CAKES!!!!


Here's how I made them:

1 - 9x13 box cake mix (used the Wilton gel to make it 3 different colors - next time I am going to use school colors- not sure why I didn't think of that first?!).


Shaped into 2 pencils and placed on foiled covered cookie sheet.  Stuck in freezer for 15 - 20 minutes and lightly frosted.  {Go HERE to see a pencil and crayon cake!!}


Frosted to look like a pencil {a Ticonderoga pencil to be precise- because we know that those are the BEST pencils and it is fun to say!}.  Put the school year and team mascot on for fun, chocolate chips for the lines by the eraser and point, and also sprinkled some clear sugar on the white pencil point.



SURPRISE!!! 





Pencil cakes ROCK!!!  Cool moms make pencil cakes the night before school.  :-)  ha ha
